DŽIUGAS® cheese is produced under strict European control. It matures for one to four years, which classifies it as a hard cheese. Similar to Grana Padano and Parmigiano Reggiano, which are known as Parmesan, DŽIUGAS® cheese is part of the same category.
However, what many people don’t realize is that while Parmesan is made from raw milk, DŽIUGAS® cheese is made exclusively from pasteurized milk. This gives the final product a delicate, slightly sweet taste, whereas Italian hard cheeses tend to have a sharper flavor with some acidity.
During the production of DŽIUGAS® cheese, only microbial-origin rennet is used, making it suitable for vegetarians.
In 100 grams of DŽIUGAS® cheese, you’ll find 33 grams of protein—equivalent to the protein content in 200 grams of beef, 400 grams of pike, or 1 liter of milk. The protein in matured DŽIUGAS® cheese is easily absorbed because it undergoes hydrolysis into free amino acids during the aging process. This allows our bodies to “recharge” with energy within 20 minutes, whereas digesting protein from beef takes around 2 hours. Additionally, DŽIUGAS® cheese contains only 26 grams of fat per 100 grams, which is 10 grams less than other types of cheese. Furthermore, 100 grams of this wonderful product provide the daily recommended amount of calcium.
Each variety of DŽIUGAS® hard cheese has its own flavor nuances, as taste, aroma, color, and texture change during maturation. DŽIUGAS® cheese is available in different aging stages: 12, 18, 24, 36, and 48 months. Each type boasts a distinct flavor profile and spicy aroma. Interestingly, the color of the cheese varies and depends not on the aging process but on the grass consumed by the cows during different seasons.

DŽIUGAS® cheese is nearly lactose-free because, after the first year of aging, lactose breaks down into lactic acid. As a result, it’s suitable for individuals with lactose intolerance.
